Ingredients
All purpose flower 2½ cups
Icing sugar 2½ cups
Baking powder 2 tsp
Butter 1½ cups
Eggs 3
Vanilla essence 1 tsp
Grated coconut 1 cup
Coconut milk 1 cup
Method
- Pre-heat the oven to 180 º C
- Mix icing sugar and butter with a hand blender
- Add eggs one by one and beat the mixture very well with the blender.
- Add essence, baking powder, flour, grated coconut and coconut milk into this mixture and knead very well.
- Pour this mixture into a greased cake tray and bake for 30 minutes
